Yesterday I posted about how my sister has started meal prepping for all of us. Some people messaged and asked if could share some of the recipes. So I am. It’s only been two days but seriously I don’t know why we didn’t start this sooner. Cooking over here (especially because of the heat) or because of the different stuff going on, it can sometimes be so tiring!! So preparing meals ahead of time is so much easier and convenient. We’ve also been trying to avoid sugar and soda. Also, we eat only brown rice. We are trying to be healthier but right now the main goal is for us to stop eating out so much (we eat out alooot) and to start eating 3 meals a day. We usually only eat one big meal at lunch. We also decided we would eat before 6 pm and then just snack on some fruit or healthy snacks if we got hungry later in the night.
You make think, “Ahhh that cost soo much to do!” or “It takes so much time.” Actually yes, you may have to spend a little more at first for containers etc, but once you add up how much you spend eating out or spend on snacks etc..you SAVE!! Plus you’re in control of what’s going into your food and body. And when it comes to the time part, you take one day to prepare all these and then the rest of the week you can just relax.
Yesterday me and Ryan ate one of our bowls before 5. At first Ryan was like “This is all?” But after he finished he was like “I’m actually full.” So pretty much it’s all in the mind!! It’s crazy to think how obsessed we are with food. Being pregnant to has definitely made me realize that what I eat is so important. Also because i’m the pregnant one i get EXTRA in my bowls!!!!
Anyway my sister definitely inherited my moms cooking skills. It’s no secret! i get stuck with cutting up vegetables, grading cheese, and preparing whatever Han needs to cook the meals. She is such a good cook so I don’t mind it at all!! So she bought a bunch of microwave containers with two holes inside for two different portions. These are the 4 different meals she’s made so far. For breakfast we make smoothies or we can eat a boiled egg. I want to come up with some healthy breakfast meals because for me I have to have breakfast or I’ll be sick the whole day no matter if I eat later on. These recipes are kind of our own in a way because alot of the meal preps we find online have so many ingredients and alot of them we can get here so we had to improvise. I am not very good at giving recipes so just bear with how I do it ha!
BBQ CHICKEN WITH ASPARAGUS AND BROWN RICE/ TACO SALAD
BBQ CHICKEN WITH ASPARAGUS AND BROWN RICE
-Chop the chicken in small slices
-Marinate the chicken in BBQ sauce
-Soak you brown rice in water for at least 30 minutes before cooking
-Lay out a piece of foil on a pan and spray with olive oil
-Lay out all the chicken bbq on one side of the pan and the chopped up asparagus on the other side (put slices of butter on top of asparagus.
-Sprinkle a little salt and pepper one top (if you want)
Portions: 10-12 pieces of chopped up chicken/ a thong full of asparagus/ 1 cup of brown rice
TACO SALAD (MY FAVORITE!!!)
-Cook some meat with whatever spices you want!
-Chop up some lettuce and put in a small ziplock bag
-Grade some cheese and cut up one tomato and portion into small plastic bowls.
**You can add a little sauce or ranch (in moderation though!!)
BAKED CHICKEN WITH CAULIFLOWER, POTATOES, CARROTS AND YELLOW PEPPERS
-1 chicken breast sprinkled with Italian seasoning (or your choice) black pepper, salt and olive oil (cheese on top if you want)
-Chop cauliflower, potatoes, carrots and yellow peppers into small portions
-Put foil onto pan and lay out chicken breast, and spray a little olive oil on top (or coconut oil)
-Mix the vegetables in a big bowl with salt and pepper and a seasoning of your choice (bake for at least 20 minutes at 450f)
BAKED CHICKEN WITH BROCCOLI, ONIONS AND YELLOW PEPPERS & BROWN RICE
-Slice the chicken up in little pieces
-Chop up the broccoli, onions and yellow peppers
-Mix in a small bowl, basil, salt, pepper, olive oil, red pepper flakes, and a dash of cayenne (basically you can do your own mixture of whatever you want) :)
-Spread the mix onto the chicken and vegetables
-Lay out a piece of foil on the pan
-Bake the vegetables and chicken together, spray olive oil or coconut oil on top
1 cup of brown rice
